Vanilla Instant Pudding Substitute
Ingredients

cup
dry milk powder
(whole milk powder gives best flavor)
3/4
cup
granulated sugar
(or fine cane sugar)
1/2
cup
arrowroot starch OR potato starch
(thickener; replaces cornstarch)
1
tsp
vanilla powder
(or scrape & dry your own vanilla beans; see below)
1/4
tsp
salt
Optional:

Tbsp
dry cream powder
(or coconut milk powder)
A pinch of turmeric for a subtle yellow hue (mimics boxed pudding color
Instructions

Whisk ½ cup mix with 2 cups cold milk.

Beat with a whisk or electric mixer for 2 minutes until thickened.

Chill for at least 5–10 minutes before serving.

(If using arrowroot or potato starch, it won’t “gel” quite as firmly as commercial instant pudding, but chilling firms it nicely.)
