Warm Maple-Spiced Cider with Thyme & Lemon

Instructions

  1. Build the pot:

In a small pot, combine:

  1. Cider
  2. Maple syrup
  3. Lemon slices
  4. Cinnamon sticks
  5. Ginger
  6. Thyme sprigs
  7. Pinch of salt

Heat gently:

  1. Bring just up to steaming, not boiling.
  2. Reduce heat to low and let it simmer very gently for 10–15 minutes to infuse.

Taste & adjust:

  1. Fish out a spoonful, cool slightly, taste.
  2. Add a bit more maple or a squeeze of fresh lemon if needed.

Serve:

For non-alcoholic mugs:

  1. ladle straight into heatproof mugs, garnish with a lemon wheel or thyme sprig.

For spiked mugs:

  1. add 1–1½ oz bourbon/rum/apple brandy to each mug, then top with hot cider and garnish.
