Mix the mustard powder and cold water - In a small bowl, stir together the mustard powder and cold water until smooth.

Let it bloom - Let it sit for 10 minutes. This is where the heat develops.

Add vinegar and seasoning - Stir in vinegar, salt, sugar or honey if using, and turmeric if using.

Adjust texture - Add a few drops of water if it is too thick. It should be spreadable but not runny.

Rest briefly - Let sit another 10–15 minutes before serving.
