Mix flour + salt.

Add egg, water, olive oil.

Knead 8–10 minutes until smooth.

Cover and rest 30 minutes.
Filling Instructions:

1. Cook spinach

Sauté spinach in olive oil until wilted.

Cool slightly and squeeze out excess moisture.

Chop finely.
2. Combine

Mix together:

cheese
-
spinach
-
garlic
-
dill
-
pepper
-
optional lemon zest
-
Taste before filling.
Assembly:

Roll dough thin (about 1/16")

Cut circles using glass or cutter

Add ~1 tbsp filling

Fold and seal edges firmly
Cooking

Boil in salted water.

When they float:

cook 2–3 more minutes

Remove gently.
