🥟 Varenyky with Spinach & Farmer’s Cheese

Dough Recipe:

  1. Mix flour + salt.
  2. Add egg, water, olive oil.
  3. Knead 8–10 minutes until smooth.
  4. Cover and rest 30 minutes.

Filling Instructions:

  1. 1. Cook spinach
  2. Sauté spinach in olive oil until wilted.
  3. Cool slightly and squeeze out excess moisture.
  4. Chop finely.

2. Combine

  1. Mix together:
  2. cheese
  3. spinach
  4. garlic
  5. dill
  6. pepper
  7. optional lemon zest
  8. Taste before filling.

Assembly:

  1. 6
  2. Roll dough thin (about 1/16")
  3. Cut circles using glass or cutter
  4. Add ~1 tbsp filling
  5. Fold and seal edges firmly

Cooking

  1. Boil in salted water.
  2. When they float:
  3. cook 2–3 more minutes
  4. Remove gently.
