Preheat: 300°F (150°C). Line a baking sheet with parchment.
Mix sugars & spices:

In a bowl, combine sugar, brown sugar, cinnamon, cayenne, paprika, and salt.
Coat nuts:

Whisk the egg white and vanilla in a large bowl until frothy. Add nuts, toss to coat.

Add sugar mixture and stir until evenly covered.
Bake:

Spread nuts evenly on the pan. Bake 30–35 minutes, stirring halfway through, until crisp and fragrant.

Cool completely:

They’ll harden as they cool. Break apart any clusters.
