Baingan Bharta (Onion-Free)
Ingredients

globe eggplants

tomatoes, diced

grated ginger

cloves
garlic, minced

chili, finely chopped
(optional)

cumin seeds

tsp
ground coriander

tsp
turmeric
1/2
tsp
garam masala

tsp
salt

tbsp
oil or ghee
Juice of 1/2 lemon
1/4
cup
chopped cilantro
Instructions
Smoke the Eggplants

Pierce each eggplant several times.

Roast on the Egg at 375–400°F.

Cook until completely collapsed and charred.

Usually:

30–45 minutes

Cool enough to handle.

Remove skin and roughly mash flesh.
Finish the Bharta

Heat oil or ghee.

Add: cumin seeds

Cook 30 seconds.

Add: ginger, garlic, chili

Cook 1 minute.

Add: tomatoes, coriander, turmeric, salt

Cook until tomatoes break down.
