Smoke the Eggplants

  1. Pierce each eggplant several times.
  2. Roast on the Egg at 375–400°F.
  3. Cook until completely collapsed and charred.
  4. Usually:
  5. 30–45 minutes
  6. Cool enough to handle.
  7. Remove skin and roughly mash flesh.

Finish the Bharta

  1. Heat oil or ghee.
  2. Add: cumin seeds
  3. Cook 30 seconds.
  4. Add: ginger, garlic, chili
  5. Cook 1 minute.
  6. Add: tomatoes, coriander, turmeric, salt
  7. Cook until tomatoes break down.
  8. Add: eggplant
  9. Cook 5–10 minutes.
  10. Finish with: garam masala, lemon juice, cilantro
