  1. Combine everything except the butter in a small saucepan. Simmer gently for 10–15 minutes, just long enough to pull it together and slightly thicken it.
  2. Taste it:
  3. Too sweet? Add cider vinegar or mustard.
  4. Too sharp? Add a little molasses.
  5. Too fruity? Add smoked paprika, black pepper, or Worcestershire.
  6. Too thick? Add water.
  7. Too flat? Add salt.
  8. Whisk in the butter at the end if you want it glossy.
