Chicken Mortadella-Style Protein Loaf

  1. That last diced chicken component substitutes visually for some of the fat cubes in mortadella. We could also make a richer version using 1–2 oz finely diced chicken skin, which would get us considerably closer to actual sausage texture without turning it into a high-fat loaf.
  2. The important part is technique. Keep everything very cold. Grind the chicken, then process it with the salt until it becomes noticeably sticky. Add the dry milk, seasonings, egg white, and ice water gradually and continue mixing until you have a smooth, tacky sausage paste.

  3. Then fold in the pistachios, peppercorns, and diced chicken by hand.
  4. Pack it tightly into a lightly greased loaf pan, working out air pockets. Cover tightly with foil.
  5. I’d cook it gently rather than bake it like meatloaf. Put the loaf pan in a larger roasting pan and add hot water halfway up the sides. Cook at about 300°F until the center reaches 160–165°F. Depending on the loaf dimensions, figure roughly 60–90 minutes.
  6. Then cool it fairly quickly, refrigerate it overnight, and slice it cold.
  7. The result should be much closer to luncheon sausage than meatloaf: smooth, cohesive, springy, and thinly sliceable.

Note

For the Protein Pantry theme, I especially like this because you could demonstrate the difference between ground meat and an actual sausage emulsion. Visually, slicing the finished loaf and revealing the pistachios, peppercorns, and inclusions should also play very nicely on stream.

And there’s a potentially fun historical tangent here: mortadella is much older than modern American “bologna,” but bologna is essentially one of mortadella’s descendants stripped down and industrialized. A chicken version lets us follow that lineage from Roman/medieval Bologna → mortadella → bologna/luncheon meats → modern high-protein prepared meats.
