Cucumber-Tomato-Feta Salad

cucumber, diced or sliced into half-moons

cherry or grape tomatoes, halved

feta, crumbled

kalamata olives, halved, optional

chopped fresh parsley

chopped fresh dill or mint

pinch dried oregano
Dressing

olive oil

lemon juice

red wine vinegar

tsp
Dijon mustard

garlic clove, very finely grated or minced

salt, to start
several grinds black pepper
Instructions

Whisk the dressing together.

Combine cucumber, tomatoes, olives, parsley, dill, and oregano.

Toss with the dressing.

Fold in the feta at the end so it stays a little chunky.

Let it sit 10–15 minutes before serving.
