Pennsylvania Pinto Beans

Night Before:

Rinse beans.

Cover with plenty of water.

Add ½ tsp baking soda.

Soak overnight.

Start:

Drain and rinse beans.

Add fresh water, ham hock, bay leaf, thyme, pepper, and hing if using.

Bring to a boil.

Reduce to a gentle simmer.
-
Cook 2–3 hours until tender.
-
Remove ham hock, shred meat, return meat to pot.
-
Salt during the final 30 minutes.
