Tempered Wine (with Lavender)
Ingredients

cups
white wine
1
tsp
dried culinary lavender
(or up to 1 tbsp fresh lavender flowers)

tbsp
– 4 tbsp cold water, to temper
Optional:
1
tsp
– 2 tsp honey, only if the wine tastes too sharp
Instructions

Warm the wine gently in a small saucepan.

Add the lavender.

Keep it below a hard boil and steep gently for 3–5 minutes.

Taste. If the lavender is strong enough, strain immediately.

Add a little cold water to “temper” the wine.

Serve warm in small portions.
