Cucumber Feta Salad

Instructions

Step 1 – Make the Dressing

  1. In a small bowl or jar, combine:
  2. Olive oil
  3. Red wine vinegar
  4. Lemon juice
  5. Dijon mustard
  6. Oregano
  7. Basil
  8. Garlic powder
  9. Salt
  10. Pepper
  11. Sugar or honey, if using
  12. Whisk vigorously (or shake the jar with the lid on) until well combined.
  13. Set aside for 10–15 minutes so the herbs can hydrate and the flavors meld.

Step 2 – Prepare the Vegetables

  1. Wash and dry all produce.
  2. Cut the tomatoes into wedges or large chunks.
  3. Slice the cucumber into half-moons.
  4. If using, slice bell pepper and halve cherry tomatoes.
  5. Chop the parsley.

Step 3 – Assemble the Salad

  1. In a large serving bowl, combine:
  2. Tomatoes
  3. Cucumber
  4. Bell pepper and cherry tomatoes (if using)
  5. Parsley
  6. Add about half of the dressing and toss gently to coat.
  7. Taste and add more dressing if desired.

Step 4 – Finish with Feta

  1. Sprinkle the crumbled feta over the top.
  2. Add a few grinds of black pepper.
  3. Toss very lightly, or leave the feta on top for presentation.

Step 5 – Rest and Serve

  1. Allow the salad to rest for 10–15 minutes before serving.
  2. Give it one final gentle toss.
  3. Serve chilled or at cool room temperature.
