Preheat oven to 375°F (190°C).

Mix flour, salt, fennel, and parsley.

Stir in olive oil.

Add water gradually until a firm dough forms.

Knead briefly (1–2 minutes).

Roll very thin between parchment sheets.

Transfer to baking sheet.

Score into cracker-sized pieces.

Sprinkle with coarse salt and additional fennel if desired.

Bake 12–15 minutes until lightly browned and crisp.

Cool completely before breaking apart.
