Tempered Wine (with Lavender)

Instructions

  1. Warm the wine gently in a small saucepan.
  2. Add the lavender.
  3. Keep it below a hard boil and steep gently for 3–5 minutes.
  4. Taste. If the lavender is strong enough, strain immediately.
  5. Add a little cold water to “temper” the wine.
  6. Serve warm in small portions.
