Instructions

  1. Put the parsley and wine in a saucepan.
  2. Bring gently to a simmer.
  3. Add the wine vinegar.
  4. Add enough honey to sweeten, starting with ½ cup.
  5. Simmer briefly, then strain.
  6. Serve warm or cooled in small cordial-sized portions.
